Oriental mustard flour is the hottest flour we mill — finely ground Brassica juncea selected for maximum volatile oil content. Where yellow flour brings flavour, oriental flour brings fire: the sharp, nasal heat behind Chinese-style hot mustard.

Because the heat is the whole point, we treat volatile oil as a release specification, not a tasting note. Every lot is confirmed against your target range before it ships — volatile oil from 0.45% to 0.90% minimum, depending on the grind.

Volatile oil (allyl isothiocyanate) is the compound behind mustard heat, and oriental flour carries the highest levels of any variety we mill — volatile oil from 0.45% to 0.90% minimum.

That number is your formulation control: specify the volatile oil range once, and every delivery hits it. No surprises in the QA lab, no reformulation between lots.

Hot mustards, rubs and blends.

Chinese-style hot mustard. Rehydrated just before serving, oriental flour delivers the intense heat of restaurant-style hot mustard.

Meat rubs and seasonings. A measured dose brings controlled, clean heat to dry rubs, sausage seasonings and snack coatings.

Heat-boosting blends. Used at low inclusion rates, oriental flour lifts the heat of a milder base without changing its character — the formulator’s heat lever, in dry form.

We mill to your target particle size — 99% through U.S. #35–#40 mesh as standard — and can blend oriental flour down with yellow mustard flour to hit any intermediate heat level. One supplier, one spec, any point on the ladder.
