Yellow mustard flour is the mildest flour we mill — finely ground Sinapis alba with a gentle warmth rather than a sharp bite. It sits at the mild end of the heat ladder, which is exactly where most high-volume condiment and sauce formulations need it.

Heat in mustard flour is measured by volatile oil content, and yellow flour registers at the low end of that scale — volatile oil from trace levels to 0.35%, depending on the grind. The result: a flour that builds body, colour and classic mustard flavour without pushing heat past what the recipe calls for.

Milled to your mesh.

Flour is only as good as its grind. We mill yellow mustard flour to your target particle size — fine enough to hydrate smoothly into prepared mustard and dressings, with no grittiness in the finished product.

Where it goes.

Prepared mustard. The base of classic yellow mustard — flour, vinegar, water, salt. A consistent grind means consistent viscosity, batch after batch.

Mayonnaise and dressings. Yellow mustard flour emulsifies as well as it flavours, helping mayo and dressings hold together while adding background tang.

Sauces. From honey mustard to dipping sauces, mild flour adds mustard character without hijacking the flavour profile.

Need more heat? Blend it.

One flour doesn’t have to do everything. By blending yellow flour with oriental mustard flour, we can hit any heat level between mild and hot — and hold it there across lots. Ask us about a custom blend in your quote.

How hot is yellow mustard flour?
