Oriental mustard (Brassica juncea) is the hottest of the three varieties we supply. Its heat isn’t a tasting note — it’s a number: volatile oil (allyl isothiocyanate) content, the compound responsible for mustard’s pungency. Oriental seed sits at the top of that scale.

For manufacturers, that measurability matters. When your formulation calls for a specific heat level, you don’t guess — you specify. We supply oriental seed with volatile oil at 0.8% minimum, confirmed per lot, so the heat you approve in the sample is the heat you get in production.

Most of our oriental seed is destined for the mill. Ground and sifted, it becomes oriental mustard flour — the ingredient behind Chinese-style hot mustard and any product where heat is the point.

We can supply the whole seed for your own milling line, or mill it for you through our partner network to your target mesh and heat level.

Hot mustard, pickles and seasoning blends.

Chinese-style hot mustard. The intense, nasal heat of restaurant-style hot mustard comes from oriental mustard — flour rehydrated just before serving.

Pickles and relishes. Whole oriental seed goes into pickling spice blends and relish formulations where a sharper mustard bite is wanted — the hot counterpart to mild yellow seed in the same application.

Seasoning blends and rubs. A measured dose of oriental mustard brings controlled heat to dry rubs, meat seasonings and snack coatings.

Heat-boosting. Blending oriental with yellow mustard lets formulators dial in any heat level between mild and extreme — we supply both, so the blend stays consistent.

Graded, cleaned and lot-tested.

Oriental seed ships cleaned and sized in 25 kg / 50 lb bags with a standard 14-day lead time. Because heat is the spec that matters most here, we confirm volatile oil at 0.8% minimum against your requirements before the lot ships.

Common questions

What makes oriental mustard hot?

Volatile oil — chiefly allyl isothiocyanate — the compound released when mustard seed is crushed and hydrated. Oriental mustard has the highest volatile oil content of the three varieties, which is why it delivers the sharpest heat.

What's the difference between oriental and brown mustard?

Both are Brassica juncea, but oriental varieties are selected for maximum volatile oil and heat, while brown mustard is the traditional pungent type used in deli mustards and pickling. In practice: oriental is hotter.

Do you mill oriental seed into flour?

Yes. Our oriental mustard flour is milled to your target mesh — or we can supply whole seed for your own line, plus toll milling to your spec.
